Dining in Santo Domingo is everything you'd expect from a cosmopolitan Spanish Caribbean capital, home to some of the most prestigious restaurants in the region. Here, island flavors are represented in just about every dish, but international tastes abound as well. Authentic Italian can be found along El Malecón, the city's seaside thoroughfare, at the famous Vesuvio, and also Angelo Ristorante by the harbor. Or you can venture into the heart of the Zona Colonial for the best Asian food at Thai Sushi Bar Entertainment.

Variety: The Spice of the South

Thanks to mega resorts like Casa de Campo, you can find just about any type of cuisine here. But there's one thing you absolutely must not miss: seafood. Remember all those small fishing villages? The local restaurants here keep those fishermen in business, turning out plate after plate of fresh fish, shrimp and lobster every day — much of which was caught just that morning.

All Flavors Included in the East
Upscale enclaves are also the place to go for fine dining. Mitre, located in the Marina at mega resort Cap Cana, offers five-star international cuisine, with signature dishes like Risotto a la Valenciana. But even travelers staying at all-inclusives can have a superb dining experience, and even sample authentic Dominican flavors. Traditional offerings include mangú, a mix of plantains, butter, onions and cheese served at breakfast. For lunch, dishes like la bandera combine rice, beans, meat, vegetables and fried plantains, while sancocho is a Spanish-style stew.

Dominican desserts tend to fall into the "chilled" and "jello-like" categories, with flan, dulce de leche (milk-based caramel) and arroz con leche (rice pudding) being top favorites.
